Carrot Ginger Coconut Soup

Spring season comes, but the weather in Hannover a little bit cold, about 10°-5°C, I need something warm to eat and soup is always the right choice. Last night I made Carrot Coconut Soup, the recipe I got from one of German magazine. The ingredients are easy to find, for spicy taste I used ginger ,perfect for cold weather.

Carrot Ginger Coconut Soup


  • 300g carrots, peeled, sliced
  • 20g (2cm) ginger, peeled,sliced
  • 2 tablespoons butter
  • 1 tablespoon curry powder
  • 1 tablespoon sugar
  • 500ml vegetable broth
  • 150ml coconut milk
  • 3 tablespoons coconut flakes
  • juice from 1/2 lime
  • salt and pepper


  1. Heat butter in a pot, sauté carrot and ginger, add curry powder, spread sugar, pour vegetable broth and coconut milk, cook for 20 minutes.
  2. Roast coconut flakes in a pan without oil about 3 minute.
  3. Blend the soup with mixer until smooth, season with salt, pepper and lime juice.
  4. Serve the soup with roasted coconut flakes.
