Carrot apple zucchini bread….. should I call this bread or cake?, anyway I enjoy this bread for breakfast and also for dessert. This recipe is gluten free, the flour that I used are quinoa flour and coconut flour.

Ingredients
  • 3 eggs
  • 1 cup coconut oil , melted
  • 1 cup coconut sugar
  • ¼ cup fresh orange juice
  • 1 tablespoon vanilla extract or pinch of vanilla powder
  • 1½ cup quinoa flour
  • ½ cup coconut flour
  • 2 tablespoons ground flax seeds
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon powder
  • ½ teaspoon ginger powder
  • Pinch of ground cloves
  • Pinch of ground nutmeg
  • 2 cup shredded carrot
  • 1 cup shredded zucchini
  • 1 apple, peeled, diced
  • ½ cup walnut, chopped
Instructions
  1. Preheat oven to 350°F/180°C.
  2. Grease a loaf pan with coconut oil.
  3. Blend coconut oil, coconut sugar, egg, orange juice, and vanilla together.
  4. Combine flour, flax seeds, salt, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg together.
  5. Fold dry ingredients into wet along with carrots, zucchini, apples, and walnuts.
  6. Pour into prepared pans.
  7. Bake 40-50 minutes until golden brown.
  8. Let it cool for 10 minutes before serving.
