Blackberry Lime Scones

Blackberry Lime Scones


  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup sugar
  • 1 teaspoon lime zest
  • 125g butter
  • 1 large egg, beaten
  • 1/2 cup milk
  • 150g fresh blackberries
  • -------------------------------
  • egg wash: 1 egg yolk + 1 teaspoon milk
  • 2 tablespoon sugar for sprinkles

  • sugar glaze: 1/2 cup powdered sugar + 1 tablespoon lime juice


  1. Heat oven to 200°C/400°F.
  2. Line a large baking sheet with parchment paper; set aside.
  3. In a large bowl, mix flour, salt, baking powder, baking soda, sugar, and lime zest.
  4. Cut the butter into small cubes then combine it by using your fingers.
  5. In a small bowl, whisk together the egg and milk, then add to the flour and butter mixture. Use the fork to stir everything together.
  6. Add blackberries and gently stir into dough.
  7. Shape the dough into circle form.
  8. Cut the dough into 8 pieces and transfer to the prepared sheet.
  9. Lightly brush each scones with the egg wash, then sprinkle the top of each scone with sugar.
  10. Bake for about 15-17 minutes, or until light golden brown.
  11. Cool for about 10 minutes, then make your glaze.
  12. For the glaze: In a small bowl whisk together the lime juice and confectioners sugar. Drizzle over warm scones.
  13. Served with whipped cream if you like.
