Black-eyed peas salad

I got this recipe from The Untamed Cook, I didn’t know how to prepare raw black-eyed peas, I was looking at internet, the best and simple recipe, and then I found her recipe Black Eyed Beans Salad. You should soak the peas overnight, I know it would takes a long time, what I did is… I soaked it early in the morning at 07:00 am, and I prepared it at 19:00 pm for our dinner as appetizer (or you could do it vice versa). My husband loved this salad.

Black-eyed peas salad

Ingredients:

  • 150g Black-eyed Peas / Black-eyed beans
  • 800ml Water, for boiling
  • 1 onion, finely chopped
  • 1 Tomato, seeded and cubed
  • ½ red Capsicum, cubed
  • 2 Tablespoons Olive oil
  • 1 teaspoon ground Cumin
  • 1 teaspoon ground Corriander
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper from the mill
  • a pinch of Cayenne pepper

Instructions:

  1. Soak the black-eyed peas overnight (12hours). Drain and wash the peas.
  2. Boil water in a pot, add the peas, cook for 30 minutes. Remove the rest of the water.
  3. During boiling the peas, Mix the other ingredients in a bowl. Stir it with spoon.
  4. Add the hot cooked black-eyed peas into bowl of spices.
  5. Mix well until the peas covered with the spices.
  6. Ready to serve.
