This black-eyed pea patties are perfect to enjoy as snack or appetizer served with mayonnaise paprika dip, wow taste so good. The patties were a little bit spicy because I added green chili and jalapeño into it, and I spread with lime juice for tangy flavor.

Black-eyed pea patties

Ingredients:

  • 3 cups cooked black-eyed peas
  • 1 jalapeno
  • 1 green chili pepper
  • 2 cloves garlic
  • 1 cup bread crumbs
  • 3 flax seed eggs (3 tablespoons ground flax seeds+6 tablespoons water)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lime juice
  • zest of 1/2 lime
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Corn starch for dusting
  • For sauce dip:
  • 1/4 cup mayonnaise
  • 1/4 teaspoon paprika powder
  • 1/2 teaspoon lime juice

Instructions:

  1. Blend the cooked black-eyed peas, jalapeño, green chili and garlic with food processor until crumbly. Place it into a big bowl, add flax seed eggs, bread crumbs, lime zest, lime juice, parsley, salt and black pepper, mix well with your hand.
  2. Sprinkle corn starch on a small plate. Dust your hands with the corn starch to form the patty, make a ball first and press with a palm of your hand. Repeat until finish.
  3. Heat a pan with 2-3 tablespoons oil to fry the patties, cook on medium heat until golden on one side. Carefully flip them and cook the other side. Remove to a plate.
  4. Mix all sauce dip ingredients in a small bowl, combine well.
