On cold weather, soup is always the best choice to eat. I like every time I eat soup with something spicy, on this black bean chili tomato recipe I added 4 red chili peppers, if you don’t like spicy food, you can reduce the amount of chili. Here I used uncooked black beans, that means, I soaked the beans first overnight for about 12 hours, washed it and boiled it with water, for the best taste you could boil it with vegetable broth. I cooked it with tomato sauce and flavored with cumin and cilantro. Delicious and spicy recipe.

Black Bean Chili Tomato Soup

Ingredients:

  • 400g uncooked black beans
  • 1 liter water or vegetable broth
  • 400g tomato sauce
  • 4 tomatoes, diced
  • 4 red chili peppers
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons ground cumin
  • 3 tablespoons fresh chopped cilantro
  • 2 tablespoon oil
  • salt and pepper

Instructions:

  1. Soak black beans with water overnight. wash with cold water.
  2. Boil black bean with water or vegetable broth in a pot for about one hour.
  3. While waiting, prepare a sauce pan, heat oil, sauté chopped onion, minced garlic, red chili pepper and tomato. Add ground cumin and chopped cilantro.
  4. Pour into the black bean pot.
  5. Pour tomato sauce into the pot.
  6. Stir well, cook another 30 minutes.
  7. Season with salt and pepper.
