Yesterday I’ve posted Basil pesto recipe, check out the recipe here. Like I’ve said before, you could use the pesto for pasta sauce, dip or combine it with any kind of dish you like. This time I’ve mixed it into salad, beetroot salad!. I’m not sure everybody like beetroot, I also didn’t like it before.

As I tried this recipe, I think it was not bad. Beetroot can be eaten grilled, boiled, steamed, cooked, roasted or raw and shredded  as a salad. You can also make juice or soup from it. I’ve bought beetroot that already peeled and cooked at grocery store. I was a little bit lazy to prepare raw beetroot because at the end many red spots or stain everywhere. :-). Beetroot Salad


  • 3 peeled and cooked Beetroot
  • 1 Tablespoon Sesame seeds
  • 1 Tablespoon Basil pesto
  • 1 Tablespoon Olive oil
  • 1teaspoon Apple Vinegar
  • 1/2 teaspoon Balsamic vinegar
  • 1/2 teaspoon Sugar
  • 1/2 Lemon, press the juice
  • Black pepper
  • Salt


  1. First make the dressing, prepare a bowl, mix basil pesto with olive oil, vinegar, balsamic, sugar, lemon juice, black pepper, salt and sesame seeds, stir with spoon.
  2. Cut dice the beetroot, add into dressing bowl, stir it until all diced beetroot coated with the dressing.
  3. You could directly serve it or keep it in refrigerator first for 10-15 minutes and ready to serve.
