Yesterday I’ve posted Basil pesto recipe, check out the recipe here. Like I’ve said before, you could use the pesto for pasta sauce, dip or combine it with any kind of dish you like. This time I’ve mixed it into salad, beetroot salad!. I’m not sure everybody like beetroot, I also didn’t like it before.
As I tried this recipe, I think it was not bad. Beetroot can be eaten grilled, boiled, steamed, cooked, roasted or raw and shredded as a salad. You can also make juice or soup from it. I’ve bought beetroot that already peeled and cooked at grocery store. I was a little bit lazy to prepare raw beetroot because at the end many red spots or stain everywhere. :-).
