Beetroot Salad Mustard Mint Dressing

I’ve posted beetroot salad before, served with basil pesto. This time I used different dressing; it’s mixture of mustard, maple syrup, olive oil, apple vinegar, chopped mint leaves, salt and pepper. I used cooked beetroot and grated it. You can also use raw beetroot if you like. Combine the grated beetroot with the dressing and topped with cashew nuts. For you who is Vegetarian or Vegan, will love this salad :-).


Beetroot Salad Mustard Mint Dressing

Ingredients
  • 2 roasted or cooked beetroot, grated
  • Dressing:
  • 2 teaspoons mustard
  • 1 teaspoon maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon apple vinegar
  • 1 tablespoon chopped mint leaves
  • salt and pepper to taste
  • Garnish: Cashew nuts
Instructions
  1. Prepare a salad bowl, mix all dressing ingredients, add grated beetroot, combine well, arrange on a plate, garnish with cashew nuts.
