Actually, I’m not a fans of beetroot, it taste so ‘earthy’, so I always ate beetroot in a form of dessert, for example like this cake that I’m going to post today; Beetroot Coconut Chocolate Cake.

  • 2 cooked beetroot (300g)
  • Flax seed eggs; 2 tablespoons flax seeds + 6 tablespoons water
  • 100g coconut flour
  • 300g spelt flour
  • 1 tablespoon maca powder
  • pinch of salt
  • 100ml maple syrup
  • 300g Greek yogurt
  • 4 tablespoons melted coconut oil
  • 1/2 cup chocolate chips

Topping Sauce:

  • 100g coconut butter
  • 1 tablespoon almond butter
  • 2 tablespoons maple syrup
  • 1 tablespoon cacao powder


  1. Preheat oven 180°C.
  2. Combine all dry ingredients (coconut flour, spelt flour, maca powder and salt) in a bowl.
  3. Grate or blend the cooked beetroot with food processor.
  4. Combine the flax seeds with the water and leave it for 10 minutes, until egg-like consistency.
  5. Mix maple syrup, coconut oil and yogurt. Add flax seed egg and grated cooked beetroot. Combine well.
  6. Add dry ingredients into wet ingredients. Stir in chocolate chips.
  7. Prepare round baking form underlined with parchment paper, pour the cake dough and arrange some chocolate chips on top.
  8. Bake for 40-45 minutes.
  9. For Topping sauce: combine all ingredients in a small bowl, stir well, pour over the sliced cake.
