Veggie Day Weekend ….. yup a  lot of vegetable on this recipe. Zucchini, mushroom and corn are the main ingredients. I called it “pie” because it’s look like a pie but no crust. I ate this baked zucchini corn mushroom pie for dinner. I attached some how-to-pictures below to make this, good luck!.

This recipe adapted from Pinch Of Yum , with Sweet Corn Zucchini Pie.

Baked Zucchini Corn Mushroom Pie


  • 1 big zucchini or 2 small zucchinis (500g), thin sliced
  • 2 fresh corn ears, shredded the corn kernels
  • 150g Champignon brown mushroom, sliced
  • 1 onion, chopped
  • 4 tablespoons butter
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 teaspoon salt
  • 200g shredded mozzarella cheese
  • 3 eggs, beaten


  1. Preheat oven 180°C/375°F.
  2. Prepare round baking pan, underlined with parchment paper.
  3. Heat butter in a big pan, sauté chopped onion, add sliced zucchini, mushroom and corn, cook for 5-10 minutes.
  4. Add dried basil, oregano and salt.
  5. Add mozzarella cheese, pour beaten eggs, stir well.
  6. Pour into prepared baking dish,add some more cheese, cover with aluminum foil.
  7. Bake for 20 minutes. Remove foil and bake another 5 minutes.
