Baked Thyme Potato Slices

If you need quick, easy and delicious side dish, you should try baked thyme potato slices. It’s very easy to make, you don’t need to peel the potatoes, just wash and dry them with paper towel, then slice thin the potatoes (make sure you slice with same width). In a small bowl, mix olive oil, chopped thyme, salt and pepper. Combine with potato slices, mix well until the potatoes coated with the oil mixture. Bake for 20 minutes on preheated oven (190°C/375°F) or until the potatoes becomes golden brown color. Serve warm as side dish.

Baked Thyme Potato Slices


  • 5 medium potatoes (500g)
  • 2 tablespoons chopped thyme
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper


  1. Preheat oven to 375 °F/190°C.
  2. Rinse the potatoes and dry them off.
  3. Slice the potatoes at a slight diagonal. Try to keep the slices at a similar width.
  4. Add the potato slices to a large bowl.
  5. In a small bowl, mix the chopped thyme, olive oil, salt and pepper. Combine together with potato slices. Make sure the oil mixture coat both sides of the sliced potatoes.
  6. Lay the potatoes on to a cookie/baking sheet.
  7. Bake in a preheated oven for about 20 minutes or until the thinnest pieces are a golden color.
  8. Serve warm.
