This Avocado Quinoa salad is perfect to serve as salad or main dish. To make delicious salad, first you have to cook the quinoa, check out how to cook quinoa step by step at The Kitchn. You can mix it with any kind additional into quinoa for example; cherry tomatoes, black beans or the best is to add it with avocado, like I just made. I mixed with with sauté red bell pepper to make nice color.

Avocado Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 hass avocado, diced
  • 1/2 lemon, press the juice
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1/2 red bell pepper, chopped
  • 2 tablespoons chopped parsley
  • 3 tablespoons olive oil
  • salt
  • ground black pepper

Instructions:

  1. Rinse the quinoa. Place the quinoa in strainer and rinse under the running water. Drain.
  2. Heat 2 tablespoons olive oil in the saucepan over medium-high heat, and add the drained quinoa. Cook, stirring, for about 1 minute, letting the water evaporate. Add vegetable broth and bring to a boil. Lower heat and cook covered for 15 minutes, remove the pot from the heat. Let stand for 5 minutes.
  3. Prepare a sauce pan, heat olive oil, sauté onion, garlic and bell pepper for few minutes. Mix it into cooked quinoa. Season with salt and ground black pepper. Add chopped parsley. Stir well.
  4. Mix diced avocado with lemon juice, stir well.
