This almond butter chocolate dates are of the best snack ever!, I think this quite healthy snack, if you don’t eat this too much of course :-). Actually I always eat Medjool dates for snack, but this stuffed dates make it taste better. What you need is almond butter butter for filling, sure you can also use peanut butter or any nut butter, coat with melted chocolate and garnish with desiccated coconut. Easy right! so enjoy it.

Almond butter chocolate dates

Ingredients

  • 7 Medjool dates, pitted
  • 4 tablespoons almond butter
  • 100g chopped vegan and gluten free dark chocolate
  • garnish: desiccated coconut

Instructions

  1. Line a plate or tray with parchment paper and set aside.
  2. Fill each date with almond butter and place on the lined plate or tray. Place the tray in the freezer for 15 minutes to chill the dates.
  3. Once the dates are chilled, melt the chocolate in a small bowl in the microwave in 30-second, stir until the chocolate is smooth.
  4. Dip a chilled date in melted chocolate using a fork to lift and drain any excess chocolate, immediately sprinkle with desiccated coconut, repeat with the remaining dates.
  5. Freeze until firm, you can eat it after 15 minutes or store in an airtight container in the freezer and take anytime you want (defrost for couple of minutes before eating it).
