Wheatgrass Zucchini Sunflower Seed Bread

This wheatgrass zucchini sunflower seed bread is perfect to serve for breakfast or coffee time. Normally I ate this for breakfast with a glass of milk. The main ingredients of this bread are enough energy for me to start my day, such as; ground almond, zucchini, egg, wheatgrass powder and sunflower seeds. I used wheatgrass powder from Organic Burst, it’s a powerful superfood.

This recipe inspired by one of recipe from The Magical Book of Superfoods from Organic Burst .

Wheatgrass Zucchini Bread


  • 1 cup ground almond / almond flour
  • 1 cup grated zucchini
  • 4 eggs
  • 1/2 cup melted coconut oil
  • 1 teaspoon wheatgrass powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon pink Himalaya salt
  • 1/4 cup sunflower seeds + 1 tablespoon for sprinkle


  1. Preheat oven 350°F/180°C.
  2. Combine all dry ingredients (almond flour, wheatgrass, salt, baking powder and sunflower seeds).
  3. In a mixing bowl, whisk eggs and stir in grated zucchini and melted coconut oil.
  4. Add dry ingredients into wet ingredients.
  5. Grease loaf pan with butter, pour the dough and sprinkle with sunflower seeds.
  6. Bake 50 minutes or until cooked through. Use skewer to check, it's ready if it's come out clean.
